At SoZo Coffee Roasting, we’re committed to offering decaf coffee that’s every bit as complex, flavorful, and satisfying as the rest of our lineup. That’s why we use the Ethyl Acetate (EA) Sugarcane Process, a natural decaffeination method that preserves the integrity of the coffee while being gentle on your body and the environment.
What Is the EA Sugarcane Process?
The EA Sugarcane process uses ethyl acetate, a naturally occurring compound derived from fermented sugarcane. It's the same compound found in fruits like bananas and apples, and it’s commonly used in wine and food production.
This process is carried out at origin. For us, this is in Colombia where we source our Decaf. The green coffee beans are steamed to open their pores and then repeatedly washed in a bath of ethyl acetate. The EA binds to the caffeine molecules in the bean and gently draws them out. After the caffeine is removed, the beans are steamed again to ensure any remaining traces of EA are eliminated.
Why We Chose This Method:

We avoid harsh chemical solvents commonly used in other decaf processes. EA is derived from renewable sugarcane and is considered safe and food-grade.

Because the process is gentle and carried out at low temperatures, it preserves the natural sweetness, acidity, and body of the coffee far better than traditional methods. Many customers can’t even tell it’s decaf!
- Sourced & Processed at Origin
We work with producers who process their decaf at origin, often right at the mill. This not only maintains quality control but also supports the local economy and reduces the carbon footprint of shipping green beans back and forth.
